250 gr di farina 00 (con germe di grano)
3 uova
80 gr di zucchero di canna
30 grappoli di fiori di acacia freschissimi
50gr di maizena
1 bicchiere di latte
1 bustina di lievito per dolci
3 mele golden piccole
Preparazione
Per prima cosa prendete i fiori di acacia e metteteli in ammollo in acqua fredda (non sotto l’acqua corrente mi raccomando se no li rovinerete!) per qualche minuto immergendoli ogni tanto e poi “scolateli” a mano e adagiateli su un panno di cotole ad asciugare.
Pelate le mele, lavatele e tagliatele a fette sottili e poi a pezzetti e mettetele in acqua acidula perchè non anneriscano. Nel frattempo unite in una ciotola i tuorli con lo zucchero e sbattete in modo da ottenere un composto cremoso.
Unite il lievito, la maizena e la farina (mescolati precedentemente) al composto di uova e zucchero. Mescolate bene.
Unite il latte mescolando, fino ad ottenere un composto morbido e omogeneo.
A seguire, montate gli albumi a neve ferma e poi con una spatola di silicone incorporateli al composto con un movimento dal basso verso l’alto in modo da non smontarli.
Quando avrete ottenuto un composto omogeneo aggiungete le mele e a seguire i fiori di acacia. Mescolate molto delicatamente.
Imburate leggermente una teglia e infarinatela. Poi versate il composto e livellatelo con l’aiuto della spatola in silicone.
Cospargete con un pò di zucchero e infornate a 180°C per 40 minuti circa (finoa che non sarà dorata in superficie) controllate con lo stuzzicadente! ^_^
E’ fantastica per il tè delle cinque o per colazione e si mantiene per 4-5 giorni in un sacchetto di carta, non di plastica se no diventa appiccicosissima!
* nota bene: i fiori di acacia danno quel sentore di miele meraviglioso! E ci permettono di usare meno zucchero
